Aloo Bharta

Ingredients (Serves 3–4)

4 medium potatoes (aloo), boiled and peeled

1–2 green chilies, finely chopped (adjust to taste)

1 small onion, finely chopped (optional)

2 tbsp fresh coriander leaves, chopped

1–2 tsp mustard oil (or regular cooking oil)

Salt to taste

½ tsp turmeric powder (optional)

1 tsp lemon juice or to taste
Instructions
1️⃣ Boil the potatoes

Wash and peel the potatoes.

Boil in water until soft (20–25 minutes) or steam them for fluffier texture.

Drain and let them cool slightly.
2️⃣ Mash the potatoes

Place the boiled potatoes in a bowl.

Mash them with a potato masher or fork until smooth (or slightly chunky, as you prefer).
3️⃣ Mix in ingredients

Add green chilies, onions, coriander, turmeric, and salt.

Drizzle mustard oil over the mashed potatoes.

Add lemon juice for tanginess.

Mix everything gently but thoroughly.
4️⃣ Serve

Serve fresh and warm with roti, paratha, or rice.

Optional: top with a little ghee for extra flavor.

Use mustard oil for authentic flavor, especially in Bengali-style aloo bharta.

Don’t over-mash; leaving some small potato chunks gives texture.
